We love a quick and easy recipe and this one fits the bill! Our Date and Walnut Slice is one of those great mix and bake recipes with minimal prep needed. 

A healthy, high-fibre, nutrient-packed slice for everyone in the family to enjoy. Perfect for lunchboxes or after-school snacks. 




Date and Walnut Slice

  • 4 crushed Weetbix
  • 90g melted butter
  • 1 cup chopped dates 
  • 1/4 cup brown sugar
  • 1 tspn bicarb soda
  • 1 cup boiling water
  • 1 egg, lightly beaten
  • 1 cup wholemeal (or plain) SR flour
  • 1/2 cup chopped walnuts
  • 2 tspns cinnamon

Preheat your oven to 180c and line a slice tin (28x18cm) with baking paper.

Place butter, Weetbix, dates, sugar, soda and water in a bowl. Mix well and allow to cool. Stir in egg, flour, cinnamon and walnuts.

Place mixture into the slice tin and cook for 30 minutes or until a skewer comes out clean.

You can add extra walnuts to the top of the slice if you like. 

This recipe makes approx. 16 slices.

NOTES:

If your school is nut-free, you can replace the walnuts with sultanas. 

You can make this recipe gluten-free by using gluten-free flour and gluten-free Weetbix. 

You can make this recipe dairy-free by using apple sauce instead of melted butter. 

Chop your dates in the food processor to make the slice even more moist!
