
Best Ever Birthday Cake
Making birthday cakes for the kids doesn't need to be complicated!
This recipe makes the best ever chocolate birthday cake that everyone will love. It's a budget-friendly option and it's even a little bit healthy.

BEST EVER BIRTHDAY CAKE
Ingredients:
- 3/4 cup self-raising flour
- 1/2 teaspoon bi-carb soda
- 1/2 cup cacao powder
- 1/2 cup coconut sugar
- 1 cup or 200g natural plain yoghurt
- 2 eggs
- 1 1/2 tablespoons coconut oil (or any oil)
Method:
Preheat oven to 180 degrees celsius and line a round cake tin lined with baking paper.
Sift together the flour, cacao and bicarb. In a separate bowl, whisk the remaining ingredients together.
Gently combine the wet and dry ingredients. Pour batter into the cake tin.
Bake for 20-25 minutes or until an inserted skewer comes out clean. Cool on a wire rack.
Notes:
You can easily make this recipe gluten-free by switching to gluten free SR flour and dairy-free by switching to coconut yoghurt.
This cake is not very sweet because it usually has icing on top. If you want it to be a bit sweeter, add 1/4 cup more sugar.
This recipe is easy to double and bake in a large slice tin if you need to feed a crowd. Or you can make two round cakes and stack them on top of each other.
It also freezes and defrosts really well, so make it in advance if you are pressed for time.
Icing:
You can keep it simple and top with fresh whipped cream and strawberries, chocolate ganache (melted chocolate with cream) or a butter cream icing.
