
Lunch Box Pizza Puffs

They are a budget-friendly option for school lunches and are quick and easy to make.

Lunch Box Pizza Puffs
Ingredients:
100g crusty garlic bread, cut into 2cm pieces
75g ham, bacon or salami, chopped
1/4 cup semi-dried tomatoes, chopped
1/4 cup baby spinach, finely chopped
3/4 cup grated cheese
4 eggs
1 1/4 cups milk
Method:
Preheat oven to 180C. Line a 12-hole muffin pan with patty papers.
Divide half the bread among paper cases. Top with ham, tomato, spinach and cheese and then the remaining bread.
Whisk eggs and milk together and then season with salt and pepper. Divide the egg mixture evenly among patty papers.
Stand for 5 minutes for the egg mixture to absorb into the bread and then cook for 20 to 25 minutes or until golden and set.
Notes:
Serve cold or warm in an insulated food jar.
Change up the ingredients to suit your kids' tastes. You can even use up leftover vegetables and meats.
