Lunch Box Fritters

Fritters are a great budget idea for lunch boxes and the kids will love them. In this blog, we are sharing our favourite recipe for Lunch Box Fritters.

The beauty of fritters is that you can add pretty much anything you like to the base recipe. So they are perfect for leftovers or anything in the fridge that needs eating. 

BASIC FRITTER RECIPE

  • 1 cup SR flour
  • 1 cup milk
  • 1  egg
  • salt and pepper
  • olive oil for frying 
  • 1.5 cups anything you like

Whisk the flour, milk and egg well, add in seasonings and fold through your chopped cooked meat, cheese, veges and or/herbs. 

Cook in olive oil for a few minutes until bubbles appear and then flip over to cook the other side.

Repeat until you have used up all the batter. Drain on paper towels. 

Notes:

The fritters can be served hot or cold. To take them to school hot, use an insulated food jar with a small piece of paper towel in the bottom to keep them crispy.

They are delicious with a dipping sauce like tomato sauce or sour cream. 

You can make these fritters sweet by omitting the salt and pepper, adding a tablespoon or so of sugar and using fruit or dried fruit. 

Don't use ingredients that are too 'wet' or you will get sloppy fritters. 

You can add a small dollop of things like pesto for added flavour.

Use gluten free flour and your choice of milk to suit your dietary requirements.  

Use a good amount of olive oil if your pan is stainless steel. 

You can freeze fritters but they do taste better if you reheat them before eating (use the air fryer to get them crispy again). 

 

Ingredient ideas for fritters:

  • Meat and vegetables leftover from a roast dinner 
  • Roast chicken, red onion, basil and parmesan 
  • Grated uncooked vegetables (zucchini and carrot) and grated cheese
  • Any leftover cooked meat and/or vegetables 
  • Corn, bacon, green shallot and cheese 
  • Roasted pumpkin, shredded spinach and feta
  • Corned meat and parsley 
  • Roasted vegetables, swiss cheese and pesto
