
Healthy Chocolate Bunnies
Easter is such a lovely time of year when you can gather with family and enjoy eating some yummy food! We have a great recipe for you to make Healthy Chocolate Bunnies.
It's a fun activity you can do with the kids and it cuts down the amount of sugar and artificial additives when you make treats from scratch.

Healthy Chocolate Bunnies
- 160 g (2 cups) cocoa butter
- 125 ml (1/2 cup) maple syrup/honey
- 1 vanilla pod
- 120g (1 1/3 cups) cacao powder
- 60g (1/2 cup) buckwheat kernels
- 125 ml (1/2 cup) almond butter
- 10 dates, chopped into fine pieces
Place a pan with about 3 centimetres of water on a stove. Place cacao butter into a heatproof bowl and set bowl in the water. Bring water to a simmer, then turn off heat, and allow butter to sit until completely melted.
Stir frequently and add sweetener (honey/ maple syrup) and a scrape of a vanilla pod. Remove from heat. Using a food thermometer, stir in cacao powder at approximately 55 C.
Chocolate is very delicate and can become lumpy and grainy if overheated. Avoid all contact with water as the chocolate will seize. Pour a small amount of chocolate into each Mini Poddie.
Place in a few pieces of chopped date, a dollop of almond butter, and a sprinkle of buckwheat kernels, before topping with more melted chocolate. Place in refrigerator for a minimum of 4 hours.
Remove from Mini Poddies tray and store in an airtight container in the refrigerator.
